We have spent months on the road at a time travelling across the world before we settled here in Queenstown. Finding easy recipes can be tricky when you’re moving around or have limited space or cooking equipment with you. Here are some of our favourite recipes to try on your next van trip!
Gooey Chocolate Bliss Balls
We love these, they’re no bake, you don't need any fancy equipment and they’re healthy and great to eat on the go. We made these a heap when we were travelling and they made the perfect dessert or snack while we were on the move.
You’ll need:
1 cup (220 g) Medjool dates
½ cup (40 g) rolled oats
½ cup (45 g) desiccated coconut
2 tablespoon cacao powder
1 teaspoon vanilla extract
3 teaspoon pure maple syrup
Soak your dates in some boiling water, once soft pop them in a bowl and mash them up with a wooden spoon. Add all your ingredients and roll into bite sized balls! It’s that simple.
Fancy Canned tomato pasta
Pasta is such a staple when you’re on the road, it’s easy to cook on your cooker and it's fast and filling. You can make it a little more delicious though with a couple of simple additions!
You’ll need:
1 x can of chopped tomatoes or canned cherry tomatoes
1 x block of feta cheese
2 x garlic cloves
Veggies of your choice (we like mushrooms, zucchini, baby spinach or capsicum when they’re in season!)
Cook off your garlic with your veggies and a little oil. Add your canned tomatoes of choice and reduce down. Cook your pasta in boiling water and once done, drain and set aside. To the tomato mix, add a whole block of crumbled feta (you won’t regret it!) and stir through your pasta. Voila! This is such a delicious and easy one to make - it’ll make you feel like you’re out for dinner!
Camp Nachos
You'll need:
A bag of corn tortilla chips
1 x can tomatoes
1 x can of lentils
1 x Mexican seasoning mix
1 cup grated cheese
1 x can black beans, drained
1 large avocado, cubed
4-5 green onions, sliced
a handful of fresh coriander, chopped
1 small lime, cut into wedges
Cook ModePrevent your screen from going dark
Instructions
Pop your canned tomatoes in a pan or pot, add your beans, lentils and seasoning and cook for 5 minutes on medium heat until it has thickened up. Turn your heat down low and pop your cheese on top till its all melted and gooey!
Chop up your avocado, coriander and green onions. Mix together with the juice from ½ a lime, season with salt and pepper.
Once your cheese has melted, pop your salsa on top and use your corn chips to dip from the pot of your delicious nacho mix!
We love this recipe as there is minimal clean up and it’s a great way to share food with others too!
Cheater's Banana & Chocolate Crepe
You’ll need:
1 x white flour tortilla
1 x banana
½ cup of chocolate chips
Grab your tortilla and pop it in a frying pan on medium heat. Scatter your chocolate chips on one half and sliced banana on the other. Once the chocolate chips are all gooey and melted fold it over in half and then quarter. Voila, you’ve got a quick and easy dessert and it is totally delicious - you need to try this!
